  • 1 (14 oz ) canFull-fat coconut milk
  • 1 bunchGreen onions, white and green parts, thinly sliced, divided
  • 2 (3 oz) packagesDried ramen noodles, (discard spice packet)
  • 8 ozMushrooms sliced (crimini or shitake)
  • 1Lime, juiced
  • 2Baby bok choy, chopped
  • ½ tspSalt
  • ½ cupShelled edamame
  • 1 tspSesame seeds, optional
  • 26 minute eggs, optional

 

 

Rigatoni with Mushroom Sauce

Ingredients

  • 1 lbRigatoni pasta
  • 4 tbspButter
  • 2 tbspOlive oil
  • 1 lbMushrooms (crimini, baby bella), 1/4 inch sliced
  • 4Cloves garlic, minced
  • 1 cupDry white wine, (sauvignon blanc)
  • 1 cupChicken stock (or veggie or beef)
  • 1 cupHeavy cream
  • ¼ cupChives, minced
  • 2 tbspParsley, minced
  • ¼ cupParmesan cheese, freshly grated
  • 1/2 tspSalt

Wine Braised Beef with Mushrooms

Ingredients

  • 5 lbsChuck roast, cut into 3-4" pieces
  • 2 tbspOlive oil
  • Generous amounts of kosher salt and pepper
  • 1Medium sized onion, finely diced
  • 2Large carrots, peeled and finely diced
  • 2Bay leaves
  • 4Garlic cloves, smashed
  • 2 tbspTomato paste
  • 3 tbspFlour
  • 1 lbCrimini mushrooms
  • 3 cupsLight red wine, like a pinot noir
  • 3Sprigs of fresh thyme
